Boiled Moringa Leaves as a Leafy Vegetable: Leaves are normally cooked by steaming or boiling to preserve its nutrients. Overcooking (above 140 degrees Fahrenheit) needs to be avoided as it may result in loss of some nutrients. Boiling with salt increases sodium content of the food. Raw Immature Pods as a Vegetable: Tender immature pods of Moringa plant is the most utilised and the most valuable parts of the plant. Immature pods contain all essential amino acids and are rich in health-providing vitamins and minerals. Comparatively, fresh Moringa leaves are far more nutritious than fresh immature pods; however Moringa pods are better sources of dietary fiber, potassium, and Vitamin C.
